Sugar's Weight Watchers cooking log take two!

Hello friends,

Thinking back to my favorite memories they always involve three thing.
Food, friends, and family.

I hope you have time in life to cook and enjoy your food with family and friends...it adds so much joy and pleasure to life.

In fact with fall harvest around the corner there is nothing better than making a Delicious spread and inviting people over for food, fun, and excellent convo.

Try making this simple and very delicious recipe with friends and see if you don't smile and say "mmmmmmm". This recipe contains no meat so if you are a vegetarian this recipe will rock your socks.

As always, I have edited the recipes from the weight watcher book so check the book for the original recipe if you'd like to. :)

Weight Watchers Ultimate Flex & Core Cookbook Page 227

Black Bean and Avocado Tacos

1 TBS extra-virgin olive oil

1 onion, chopped

6 garlic cloves (I LOVE garlic)

3 TBS reduced sodium taco seasoning (I made my own)

1 (15 1/2-ounce) can black beans, rinsed and drained

3 plum tomatoes, Chopped

1/4 Cup water

6 corn tortillas

1 Hass avocado, pitted, peeled, and diced (I use this in my pico de gallo)

6 TBS prepared Pico de gallo ((I used the salsa from Sugar's Weight watchers cooking log one blog.))

4 TBS light sour cream ((YUM))

Cooking instructions

1.) Heat the oil in a large nonstick skillet over high heat. Add the onion, garlic, and taco seasoning; cook, stirring occasionally, until the onion just starts to soften about 2-4 min. Add the beans and cook, partially mashing with a wooden spoon, about 2-4 min. Stir in the tomatoes and water; cook until the tomatoes wilt and the water evaporates, about 2-6 min.

2.) Meanwhile, warm the tortillas according to package directions. I use a cloth towel, wrap up the tortillas in that and set my microwave to warm and cook for 2-6 min. Top each tortilla with 1/3 cup of the bean mixture, and 1 TBS of the pico de gallo, and 2 tsp sour cream. Serve and enjoy. "mmmmmm"

Sugar's Weight Watchers Cook log One

Hello Everyone,

As you know I have started Weight watchers. I am passionate about food perhaps a little too passionate (LOL) and so I thought I'd make some food blogs on here with recipes I have taken from Weight Watchers. However; I add a little of this or subtract some of that to the recipes to suit my taste. *wink*

The photos you are looking at with these blogs are pictures of my Husbands plate who is not on weight watchers so the portion sizes are larger. :)

First meal on WW is from the book, Ultimate Flex & Core cookbook. Page 109 ((I have edited all recipes to fit my budget and likes, so check the actual recipes in the books for their suggestions if you'd like.))

Fajita-style Skillet Pork

1/2 Pint Cherry Tomatoes, quartered

2 Medium Avocados, peeled and cut into 1/4-inch cubes

4 TBS chopped Fresh Cilantro

1/2 lime squeeze for fresh juice

2 TSP olive oil

1 pound Pork tenderloin ( I used flank steak)

1 onion

1 green bell pepper, seeded and cut into strips

3 TSP Mexican seasoning (I made my own)

2 TBS reduced sodium soy sauce

Cooking instructions

1.) Combine the tomatoes, avocado, cilantro, and lime juice in a medium bowl.
(This makes an amazing salsa. I use this recipe on all kinds of meals and highly recommend it.)

2. Heat 2 TBS of oil in a large nonstick skillet over medium-high heat. Add half the meat and cook, until browned and cooked through,a bout 4 min. Transfer meat to a plate. Repeat with the remaining meat.

3. Heat the remaining oil in the same skillet over medium-high heat. Add the onion and bell pepper; cook, stirring occasionally, until the vegetables are very soft, about 5 min. Add meat and Mexican seasoning; cook, stirring frequently, about 1 min. Stir in soy sauce and cook until liquid almost evaporates, about 30 seconds. Serve with the salsa.

I also made a cilantro rice to go along With the meal. I made up the recipe as I was going along and it came out pretty yummy considering I had never done it before. **smile**

Cilantro & Lime Rice

2 Cups rice

3 Cups water

1 lime quartered

4 TBS Cilantro trimmed leaves and minced

1 TBS I can't believe it's not butter light

Garlic salt to taste

Pepper to taste

Cooking instructions

1.) Cook the rice and water in a rice cooker until done.

2.) Remove the rice from the cooker and add to a medium bowl

3.) stir in the lime, cilantro, and seasonings and enjoy!

I also cooked corn on the cob to go with our meal and it was excellent all point friendly and the whole family and our friends who do not do weight watchers could enjoy!

Where 3 comics meet in three random places and battle it out. If you'd like to be a part of the crowd you can show up to any of these three places. Please note that each place will be an average of 1 1/2 to 2 hours of film time & you should be prepared to stay the entire time of filming of that location.

This Show will be Hosted by, HBO's last comic standing, Mikey Winfield & Co-Hosted by Sacramento's own John Ross who has done, Oddly Americana, and many other shows.

What is your name: Sonia Semone

Do you have a formal art education or are you a self taught artist: Bachelor of Fine Arts and Master of Arts

What is the style of your pieces: Nonrepresentational motivated by a play of color

What is the medium in which you work: Acrylic, Acrylic, Acrylic-- oh and did I mention Acrylic

What started you on your path as an artist: Being deranged, an appetite for punishment, wanderlust and a penchant for day dreaming

What is one of the most important things that art has brought to your life: Contentment

What is your favorite genre of art besides the one you work in: I would have to say impressionism. The brushstrokes and colors that creep into abstraction.

Do you have art showings, and if so what are they typically like: They are always a lot of fun-- just ask my friends ;) We have the art, of course, food and beverages, sometimes live music.

Do you have a certain set of clothes you make art in: Oh Yes I do! I have paint shirts and sweats -- my most favorite things to wear when I am painting -- they are splattered all over.

What has been the most frustrating part of being an artist: Galleries that don't know a thing about art run by people that don't paint. No advocacy for artists-- hey artists, I think we should unionize. Oh and my most favorite thing that I love to hate -- copycat unoriginal fake artists!

What is your favorite sandwich of all time: I have too many to name, but any melt with cheese is a friend of mine- add pesto and we are best buds. I could go for a turkey Ruben right about now.

Has this year brought about any changes in your work, and if so what are they: I have been doing some new texture work with a little less color. It is a totally different feel for me.

Who is your favorite artist alive or dead: I don't really have a favorite, I love so many. I saw an Adolph Gottlieb in person at a modern museum and If I had all the money I needed I would have bought it. I am also a big fan of Audry Kawasaki.

What is the most moving piece of artwork that you have seen in person: Oh-- I just said that huh. Well, darn. I was in awe of a Pollock I saw, not necessarily the composition but the layers upon layers of paint, and the shear size of the canvas. HUGE!

Do you have any animals, and what do they think of your work: I have a doggy and she loves to run over my work and get paint on the carpet. That has happened a few times.

Hi everyone,

SO, this weekend was really fun... I had a chance to do a shoot with models Mario & Evin. I haven't the chance to get all the pics done yet, but started to play around with a few and had a ton of fun. I love the diversity and essence of these. The fake grill and pimp ring was a lot of fun!

I am still shooting and need models so if you are interested hit me up with a message. Tell your friends...I'm only doing TFCD for a little while and then I will charge a really ridiculously low rate after that so that I can buy a camera and stuido equipment. *yay*
